I was born and raised in Haapsalu. Working as a chef for years, I gained valuable tips and techniques from the best and adapted them to our cuisine. I like everything fresh and local. My favourites are mulberries and juniper – authentic tastes of Läänemaa.
My ambition is to create a menu that reflects the essence of contemporary Estonian cuisine. The nature of the dishes offered is determined using cooking methods specific to Estonia, but nuances are added by techniques from Nordic cuisine.
